Why You’re Paying $11 a Pound for Wagyu Brisket That Pitmasters Get for $7.90
The brisket in a busy BBQ pit and the one in your online cart can come off the same kind of cattle. The difference is four middlemen, and one supplier just cut them out.

In this report
- Where the extra $3 a pound on online wagyu brisket actually goes
- How backyard cooks can now buy at close to what the pros pay
- A 100% Fullblood, BMS 11-12 packer for less than a crossbred one
Picture a backyard pitmaster. Call him Mike.*
He’s got an offset smoker on the patio and a 1,000-gallon dream. He’s watched every video, trimmed his first packers on cheap Choice, and decided it’s time to cook “the real thing.” So he finds the biggest name in online wagyu, picks the 18-pound brisket, and pays $209. That’s just over $11 a pound.
The brisket is good. But a few weeks later, talking with a guy who runs a commercial smoker, Mike asks what he pays for wagyu packers.
The answer: well under $8 a pound.
Same 14 hours of post oak smoke. Nearly $3 a pound apart.
*Illustrative example. The $209 price is the public price of an 18-20 lb wagyu brisket at the largest online wagyu brand, checked October 16, 2026.
Where your extra $3 a pound goes
What changes is how many hands it passes through before it reaches you. When you buy wagyu brisket from a big online brand, you’re usually paying for four of them:
Every step adds its margin. None of them makes the brisket taste better. That’s why the joints with lines around the block can sell you a sliced pound of wagyu brisket and still make money.
So why can’t you buy it that way?
For years, you couldn’t. Wholesale meat suppliers sell by the case, to businesses with accounts. A guy with one smoker in his backyard wasn’t worth the paperwork.
That changed when Ranch to Pit partnered with a wagyu supplier that sells to commercial BBQ kitchens and convinced them to open part of their supply to backyard cooks.
The deal is simple: the packers the pros buy, at close to what the pros pay, shipped to your door. The only thing missing is the markup.
The numbers
Read that last line again. For $60 less than one brisket from the big brand, you get the brisket, two ribeyes for the night before the cook, and ground wagyu for smash burgers while you wait out the stall.
And it’s not the same brisket. It’s better. Most “American wagyu” sold online is crossbred. Ours is 100% Fullblood, the genetics that usually sell for $20 a pound and up.
